Instructions
 

Browning the Butter

  • Begin by browning the butter. In a pan over medium heat, melt the unsalted butter. Stir it occasionally as it begins to foam and eventually turn a golden brown color. You'll know it's done when it smells nutty and you see brown bits forming at the bottom of the pan. Remove it from the heat and let it cool slightly.

Combining Ingredients

  • In a large mixing bowl, combine the brown sugar and granulated sugar. Pour in the cooled brown butter and mix thoroughly using a whisk or rubber spatula until the sugars are well combined with the butter.
  • Add the eggs to the sugar and butter mixture, followed by the pure vanilla extract. Beat everything together until it's light and fluffy.

Mixing Dry Ingredients

  • In another bowl, whisk together the all-purpose flour, cornstarch, salt, and baking soda. This creates an even blend of dry ingredients.
  • Gradually add the dry ingredients to the wet mixture. Using a spatula, fold them in gently until just combined.

Add Chocolate Chips

  • Gently fold in the semi-sweet chocolate chips.

Chilling the Dough

  • If you like, cover the dough and let it rest in the refrigerator for about 30-60 minutes.

Baking

  • Preheat the oven to 350°F (175°C). Line your baking sheet with parchment paper.
  • Scoop out balls of dough using a tablespoon or cookie scoop, and place them on the prepared baking sheet, leaving enough space between each.
  • Gently press down on the dough balls to flatten them slightly for even baking.
  • Bake the cookies in the preheated oven until the edges are golden brown, but the centers appear slightly underbaked. Remove the cookies and let them cool on the baking sheet. Optionally, sprinkle with Maldon sea salt flakes while they are still warm.

Notes

Allow the cookies to cool slightly on the baking sheet before transferring to a wire rack. Experiment with letting the dough rest longer in the fridge for richer flavors.
